scrambled egg in the microwave I can do, some butter and a little milk with the eggs, on high for about 3 minutes, stir every minute or else it looks like an omlette
do not over cook as they continue to cook for a while once the time is up

      butternut in the microwave
prick all over with a fork and put on plate in the microwave
cook on high for 15 minutes turning half way through
leave to stand for about 5 minutes
slice in half down the length and remove seeds, salt and black pepper and eat out of the skin

Thanks Breda. Does the timing depend on the number of eggs?

          yes, I use 3 eggs

more eggs in one bowl I have not tried as three is enough for me

usually with microwave cooking double does not mean double the time
for instance if you cook one potatoe about fist size, it would take 4 minutes, but for every other potatoe added it takes half the time again
          so 1 potatoe 4 minutes, 2 potatoes 6 minutes, 3 potatoes 8 minutes

they have to be pricked with a fork first or they tend to explode a bit lol

baby potatoes are so easy, I put about 8 in a plastic jug with one tablespoon water and a plate on top, 6 minutes on high

cauliflower and broccoli cook same way

fish is also so easy to cook in the microwave, tesco now had bags that you can cook the fish in, but if you do not have a bag, a bowl or one plate on top of the other will do
no water needs to be added

about 5 minutes to cook a large piece of fish

Spanish Chicken with Chorizo and Potatoes

                        Ingredients SWITCH TO CUP MEASURES

                        2 tablespoons olive oil
12 chicken thighs with skin and bone still on
750 grams chorizo (whole if baby ones or cut into 4cm / 1½ inch chunks if regular sized)
                        1 kilogram new potatoes (halved)
2 red onions (peeled and roughly chopped)
                        2 teaspoons dried oregano
                        grated zest of 1 orange
                        Method

Preheat the oven to 220°C/gas mark 7/425ºF. Put the oil in the bottom of 2 shallow roasting tins, 1 tablespoon in each. Rub the skin of the chicken in the oil, then turn skin-side up, 6 pieces in each tin.
Divide the chorizo sausages and the new potatoes between the 2 tins. Sprinkle the onion and the oregano over, then grate the orange zest over the contents of the 2 tins.
Cook for 1 hour, but after 30 minutes, swap the top tray with the bottom tray in the oven and baste the contents with the orange-coloured juices.

                          Banana Bread Recipe
                          Prep time: 10 minutes
                          Cook time: 1 hour

                          over ripe bananas are best

2or 3 bananas, peel and mash
                          1/3 cup melted butter
1 cup of sugar or less if desired
                          2 egg, beaten
                          1 teaspoon vanilla extract
                          1 teaspoon baking soda
                          Pinch of salt
                          1 1/2 cups of all-purpose flour
                          Method
Preheat the oven to 350°F (175°C), gas mark 4
I just mix everything in a bowl, tend to fold in with a spoon

Pour the batter into your tin, Deals sell tin liners for 1.49 think about 20 in packet
cook for 1 hour or until whatever you poke it with comes out clean.
